Keema Pao meets French brioche in Chef Max's kitchen

Tired of watching Indians pour tabasco on his Italian treats, ex olive Chef Max decided to give Mumbai what it really wants, at his new restaurant that he's called Purple Rain

When in India, do as the Indians do, is the motto Chef Max seems to have taken to heart. The one-time Head Chef and Chef de Cuisine at Bandra's Olive Bar and Kitchen, is now going to manage his own restobar Purple Rain at SoBo Central. Here, the menu is going to be all, hold your breath, Indian.



"It will include Indian food cooked with Mediterranean ingredients," says the Chef, who has been cooking for more than three decades. "This menu has been inspired by the Indian palate. I have been in India for a long time now, and have learnt a lesson the hard way if you open a restaurant that will serve Italian, in the Italian way, you will close down pretty soon. Indians need spice what's the point of making a dish with the finest olive oil when you're going to empty half a bottle of tabasco on it?" he laughs, also admitting that it's easier to train an Indian staff when it comes to Indian food. So what would he suggest we order when we drop by? "The Rawas in Mediterranean Sauce, and my twist on the good ol' Keema Pao, where I replace the Pao with a French Brioche."
