Caramel notes

A toddy can be concocted with whisky, brandy or rum but Café Zoe co-partner Jérémie Horowitz prefers sticking to brandy and cognac for the two versions of Hot Toddy served At the restobar. “The motive is purely emotional. A hot toddy always reminds me of winter, flu, cold or rain. I cannot imagine any other spirit to soothe your nerves as perfectly as brandy or cognac,” he says. The drink includes freshly-chopped oranges and apples, lime, star anise, cloves, cinnamon and honey.

It's berry good
Who said cranberry can only be paired with vodka? Try Berry Toddy, where the acidic, sweet juice is mixed with brandy, and spiced with cinnamon and cardamom. The drink also features apple and orange chunks, and a dash of honey. Pair it with a basket of Malgapodi Onion Rings, Besant Nagar Chillies, Tomato Wedges and Bombay Toastie.

A whiff of the valley
