At Magazine Street Kitchen, taste modern American food that’s all about the 'ingredient'
What we know of American food is probably limited to hotdogs, corndogs and buffalo burgers. But if you want to sample sophisticated “modern” American cusine, it wouldn't be a bad idea to head to Colaba’s chic spot, Magazine Street Kitchen, this week. Chef Tim Dornon, former sous chef at Eleven Madison Park, New York, will be cooking a grand seven-course meal.

“We get a guest chef down every few months to give our patrons a new experience, in keeping with the restaurant’s vibe,” says Gauri Devidayal of The Table. Modern American cuisine, she says, takes inspiration from cuisines all over the world. It helps that Dornon also trained under two of America’s most prominent French chefs, Daniel Boulud and Laurent Gras. “Traditionally, American food is junk food. But, modern chefs are taking inspiration from the world and coming up with an ingredient driven cuisine — which means that the freshest produce available is picked and a meal created around it. For example, at The Table, we have spaghetti where zucchini is the star.” Dornon will be arriving today and then go produce shopping with the restaurant’s head chef Alex Sanchez. “The meal will be fresh and have the best ingredients. Also, it will be served family-style, where you share everything,” Devidayal says.
