Ingredients For pizza dough Tipo 00 grade farina 175 gmWater 100 mlSalt 5gmOlive oil 4 gmYeast 0.33 gFor salsa macha Chipotle chilli 3 nosHabanero chilli 1 nosDry Kashmiri chilli 5 nosArbol chilli 3 nosSesame seeds 2 tspPeanuts 2 tbspOil 60 mlSalt 3g For Salsa Macha Chicken Chicken Leg Boneless 150gSalsa Macha 2 tbsp Mozzarella 80 gmJalapenos 1 slicedCilantro Leaves 7-8 nos Method1. Sieve flour and combine all dry ingredients.2. Mix yeast with water and add to the dough.3. Make a dough by kneading till the gluten is formed well.4. Rest for 24 hours in the refrigerator.5. Next day, slap and shape the dough till flattens out.6. To prepare salsa macha, heat oil in a pan and all dry chillis till they puff.7. Quickly add other ingredients and cook for about 45 seconds more and remove.8. Cool the mix and grind coarse to get salsa macha.9. Marinate the chicken with salsa macha for 4 hours and sear on a hot pan and roast in the oven at 190 degrees for 8 minutes.10. Smear a raw tomato purée and salsa macha in the ratio of 1:1.11. Add the above mentioned cheese and spread evenly. place the cooked chicken leg cut into cubes.12. Bake at 375 degrees celsius for 4 minutes.13. Dissolve yeast and sugar in warm water. Let stand until yeast softens and begins to form a creamy foam, about 5 to 8 minutes. Combine flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together. Transfer dough to a floured surface and knead until smooth, about 2 minutes. Use your fingers to stretch the pizza dough to make a thin crust base. Add pizza sauce. Add toppings of mozzarella cheese, and pepperoni slices. Bake at 320 degrees Celsius for 7 to 8 minutes.
