Rajeev's Favourite Food: Egg Bhurji
Ingredients:
1 onion (finely chopped)
4 to 5 cloves garlic (finely chopped)
2u00a0 finely chopped green chillies (or as per taste)
u00a02 to 3u00a0 tbsp olive oil
6 to 8 florets brocilli
1 small sized zucchini (cut into roundels)
3 to 4 French beans (string and finely chopped)
100 gms soya paneer (cubed)
u00a06 to 8u00a0 mushrooms ( washed well and cut into halves)
8 to 10 eggs ( use only the egg whites)
A pinch of garam masala powder
Salt and pepper as per taste
Finely chopped coriander leaves (to garnish)
Method:
Separate the egg whites from the yolks. Beat the egg whites and keep aside. In a non-stick pan saute the onions, garlic and green chillies in olive oil till the onions turn pink. Add mushrooms and French beans. Saute for two to three minutes. Add the brocilli and zucchini. Stir fry for one minute. Add the soya paneer and mix well. Add salt, pepper, garam masala and mix well. Add the egg whites and mix well. Cook on a low flame, stirring continuously till the egg whites are cooked to a bhurji. Garnish with finely chopped coriander leaves and serve hot with brown bread toasts.
