The trending TikTok tortilla wrap hack is worth the hype. Chefs across the city take it a few notches up

BBQ jackfruit wrap

Everyone is loving the simple and easy TikTok tortilla wrap hack that went viral last week. The concept is easy: cut a slit to the middle of a tortilla or roti, and fill each quarter with your favourite fillings and toppings. Then, fold each quarter onto another, until you have a nice, layered wrap. Put it on a tava or grill to make it hot and toasty. The best part is, you can combine any flavours and your easy meal on-the-go is ready. Chef Aabhas Mehrotra, executive chef, Sorrentina, says, “The year of the pandemic was one of feel-good meals and comfort food, and this trend has kept the ball rolling in 2021 as well. Like its predecessors, the wrap is all about making something easy and portable.”


Pizza portafoglio or wallet pizza

Just as New York has the slice, Napoli has the pizza portafoglio. This classic Neapolitan street food is made by taking a classic margherita or marinara Neapolitan pizza and folding it up to make it portable. Chef Mehrotra says, “It is the perfect on-the-go snack. I picked and paired ingredients based on five flavour profiles: Sour (artichokes and fresh basil), heat (blistered chillies), sweet (charred bell pepper and olives/caper salt) and bitter (fresh lettuce/arugula and fat (straciatella cheese) for that perfect mix in every bite.”

Ingredients
Pizza dough/base or tortilla, artichokes, fresh basil, blistered chillies, charred bell pepper and olives, caper salt, fresh lettuce or arugula and straciatella cheese.

Method
Step 1 Roll out the dough if you want to make from scratch or use a pre-baked think crust dough. You could use a tortilla as well. Cut a slit in the middle of dough.
Step 2 Spread the marinara sauce. Divide the base into four quadrants by layering the ingredients (except lettuce) in each quarter.

Step 3 Bake/ flash the base in the open till the cheese becomes all good and nice.
Step 4 Place the baked yumminess on the parchment sheet, add the lettuce.
Step 5 Do that TikTok fold.

Chef, culinary consultant and food stylist Karishma Sakhrani says, “Who would have thought a simple cut with a knife could change the way we eat wraps? I think it’s a very neat trick to stuff a wrap with equal amounts of protein, veggies, cheese and some fun sauces.

As a general rule, that’s how I like to build my wraps. This makes it fun and on-the-go as everything neatly tucks inside with each fold and you have a wrap bursting with deliciousness.”

Ingredients
Beetroot tortilla or roti, seasoned jackfruit, grated cheddar cheese, avocado, arugula, green onions, corn and purple cabbage.

Method
Step 1 Cut the tortilla from the centre, to one side.
Step 2 Start with the seasoned jackfruit in one triangular portion of the wrap. You could alternate it with protein of your choice.
Step 3 Next, add grated cheddar cheese in another section.

Step 4 Combine some arugula, green onions, corn and purple cabbage and pile high in the third portion of the wrap.
Step 5 Add half an avocado, sliced and seasoned.
Step 6 Going anti-clockwise, start folding the wrap over each section, until you have a triangular wrap.

For Cheese cake filling
In a bowl over a double boiler, mix 150 gms of cream cheese, 50 gm of sour cream and 1 tsp vanilla extract until smooth. Slowly add 1 tsp corn starch (mixed in water) and keep mixing until thickened. This will help to prevent the cream cheese from melting during cooking.

Strawberry Cheesecake xangos with honeycomb ice cream, roasted almonds and cinnamon sugar
Chef Arun D’souza of Perch Wine and Coffee Bar, Bandra thinks, this wrap, in its sweet-version is much like the Mexican xangos or fried cheesecake chimichangas. He says, “While the fame of the burrito is not new, its lesser-known cousin—the xangos—is a fantastic dessert. Usually not seen outside of Central America, this could become the next big trend.”

Ingredients
Strawberry compote, cheesecake filling, tortilla, cinnamon sugar, toasted almond slivers, honey comb ice cream, fresh strawberries, and whipped cream.

Method
Step 1 Lay the tortilla flat, spoon one tablespoon of the cream cheese filling and ½ tablespoon of the strawberry compote inside.

Step 2 Fold each side until each side is sealed. Secure with toothpicks.

Step 3 In a shallow pan, melt a little butter and oil, fry each burrito until crisp and coloured.

Step 4 Dust with cinnamon sugar immediately on removing from pan. Serve with toasted almond slivers, honey comb ice-cream, fresh strawberries, whipped cream, and strawberry compote as garnish.
