Kaboul struck with five minutes to play at the Emirates Stadium as Harry Redknapp's team secured their first win at Arsenal since May 1993. 
It means William Gallas had the last laugh on his old Arsenal teammates after being named Spurs captain on his first return to the Emirates after leaving as a free agent in the close-season.
The defeat also meant Arsenal missed the chance to go top of the table and put pressure on leaders Chelsea.
"I thought William Gallas was just amazing, he led the team by example and he, for me, was man of the match," Redknapp told Sky Sports.
"Younes Kaboul was outstanding but Gallas was top drawer. "In the first half we didn't really get hold of the ball.
We changed it at half-time, which opened us up even more really, but we started the second half on the front foot, got back into the game and had a great second-half performance."
