Khatta Meetha Methi Chicken

Ingredients:
1. Chicken (with bone)
2. Dry Fenugreek leaves
3. Fenugreek and fennel seeds
4. Yogurt
5. Lemon juice
6. Sugar
7. Mustard oil
8. Salt
9. Crushed cardamom, cinnamon, clove, dry red chillies
10. Red chilli powder
11. Cashew paste
12. Ginger garlic paste

Method:
1. Marinate the chicken with yogurt, lime juice, salt, mustard oil, red chilli powder, and dry fenugreek leaves. Leave it aside for 2 hours. On the other side soak handful of cashews in a separate bowl.
2. Roast dry red chillies, handful of fenugreek seeds and some fennel seeds on a dry pan. Add these dried spices to chopped garlic, onion, and cashew and blend it in a mixture. Ensure you add proportionate amount of water while making the mixture.
3. Heat oil in a pan. Once the oil gets heated up appropriately, put the mixture and add salt and red chilli powder to it.
4. Keep on stirring until you see oil coming out from the mixture. Then, add fenugreek leaves, lime juice, and, sugar. Stir for a while and cover with a lid. While the mixture is being cooked, pour the marinated chicken and stir well. Cover with lid once again and let it get cooked for sometime.
5. Add proportionate amount to water. Stir well and cover with lid.
6. Open the lid after a while and check if the dish is almost cooked or not. If it is almost over, add dry fenugreek leaves and little bit of sugar. Squeeze lime juice all over and stir for a while.
7. Once you inhale the tempting aroma of fenugreek, bring it down from the oven and place it on a bowl.
Serve the ‘Khatta Meetha Methi Chicken’ with chappati for an authentic ‘desi meal’ on a lazy weekend.
