As the mercury continues to rise, mixologists and restaurateurs shake things up with four exciting summer cocktails

The Farzi Tina is a vodka-based cocktail featuring California oranges and refreshing kaffir lime leaves, topped with home-made soda. “The combination of oranges and kaffir lime is extremely refreshing and cooling at the same time, perfect to help you beat the sweltering heat,” says Aman Dua, Head Mixologist, Massive Restaurants Pvt Ltd. To make this drink at home, muddle together four to five chunks of California orange with around five kaffir lime leaves to extract flavour from both. Then, pour in lime and orange juice, and mix in 60ml of vodka. Top with soda and serve chilled.

A gin-happy fruity treat
The Gin Kane is a concoction comprising fruity, tropical flavours. Ishaan Bahl, partner at 145, says, “This cocktail brings together the freshness of mango, strawberry, orange and coconut cream perfectly, all with a punch of gin. Served in a tiki glass, it's a quintessential summer drink.” To make it, mix together 60ml of gin, 30ml mango pulp, 15ml coconut syrup, 30ml fresh cream, 90ml orange juice and 20ml strawberry crush. Garnish it with a half moon orange slice and serve it in a pretty tiki glass, and you're all set.

Chill with beer
What better to drink on a hot summer's day than an ice-cold glass of beer? This perennial favourite gets an upgrade in the form of a drink called Herbed Beer. “The drink combines beer with fresh green apple juice, ginger juice, and cinnamon,” says bartender Bhagirath Saw.

Flip over this cocktail
The Aperol Flip is a cocktail worthy of being served at your next garden party. Sean Pereira, F&B manager at the outpost, says, “It's a lovely pre-dinner drink to serve to guests. The sweet and bitter flavours are tied together nicely by the dry sparkling wine, giving you a light, summery concoction.” For this cocktail, combine Aperol, egg white and demerara sugar, and shake well. Add Prosecco, an Italian bubbly, which will give the drink a nice fizzy character.
