Restaurateur A D Singh might not be able to cook himself, but he's great at feeding others. He owns some of the best restaurants in town and has recently opened Lap, a venture with Arjun Rampul in Delhi. He talks to CS about his love for food, his favourite cuisine and about other things that interest him.
Food first
Serendipity has been the story of my life. It was all about fateu00a0-- finding and meeting the right people. I didn't grow up as a foodie. I was a typical teenager fond of eating out. I started writing weekly food columns which also meant eating out at different restaurants, food festivals and meeting big chefs day in and day out. Then I just decided to start my own venture. Now here I am with 20 years of experience in the industryu00a0-- loving it, living it and breathing it.
Home is where the heart is
I love ghar ka khana. But if you ask me about the kind of food I eat while dining out, I'd say Japanese. Contemporary Japanese cuisine interests me. It is very fresh and exciting. Every year I go to London and eat out in some of the best Japanese restaurants there. For me it is not about the cuisine, but about the ideas, innovation and concept. The whole concept of molecular gastronomy is increasngly becoming popular. I might not love it, but I do find it interesting.
I can eat anywhere u2013 the smallest and the dirtiest of places as long as they are different in any way, be it in their menu, their service or their ideas. For this very purpose I enjoy eating in Australia.
What's cooking
I am an awful cook myself. When I was studying in America, my mom made me take cooking classes. I learnt how to make the basic fare like dal, chawal, pasta and all. I was very famous for my banana spaghetti in my college days. But I don't consider myself a great cook or anything.
Cool cafe
I am a very cafe person and can spend maximum time relaxing in such places. I like going to the The Tasting Room, the Crossword cafu00e9 etc. Apart from this, my wife and I regularly hang out at Swati snacks and the Breach Candy Club. These places are like little oases in the city for people like us.
