Thukpa -- SernyaaThukpa is Tibet's gift to India's dinner tables. It's a clear, noodle-based soup loaded with minced meat. At Sernyaa, a Tibetan eatery, the smiling Uncle John doles out bowls of steaming Thukpa, which is lapped up with much enthusiasm on rainy days. Expect noodles entwined around julian-cut carrots, beans, onions, cauliflower florets and spiced chicken mince in a large bowl of clear soup. Each of the ingredients contributes to the flavour of this wholesome meal, which is best enjoyed as it is served. Adding a little chilli sauce though, could always pep things up a little.

Lamb trotters are marinated and stewed with clove, cinnamon and other Indian spices to be brewed into a soup. Paya Soup has descended from Mughal royalty and is also known as Jahangiri Shorba. Cooked to perfection, the meat of the trotters takes long to tenderise and retains a slightly sticky texture that mingles with the ginger, garlic and onion marinade. A great way to add another dimension to the monsoon!
