As Indigo Deli completes a decade, chef Jaideep Mukherjee takes us through some of its classic recipes, like old-fashioned Bread Pudding, Shepherd’s Pie, and Red Wine Braised Chicken Casserole among others

Some recipes bring back a whole lot of memories - the wafting aromas from your grandmother's kitchen, the first meal that you cooked or the first time you tried your hand at your mother's recipes.

As Indigo Deli turns ten, one of the elements that they plan to introduce as part of their ten-day celebration is to revisit some of the city's favourite classic recipes. "At a meal with chefs and managers, we realised that when we eat, we choose to order the simplest of meals - those that have been tried and tested over the years - and classify as comfort food, like Shepherd's Pie.

It's when we thought that it would be interesting to dedicate a day at the Deli to invite people to sample some of these recipes, where we will stick to the old cook books and not tweak the recipes much," shares Jaideep Mukherjee, head chef, Indigo Deli. The special menu on June 28 will highlight forgotten classics such as the Minestrone soup, Camembert Soufflé, old-fashioned Carrot Cake, Bread Pudding, Blueberry Crumble and others.

Mum's the word
"I lost my mother last month. I realised much later in life, when I started cooking professionally, that my mother had a great flair for Western cooking even though she wasn't trained in that. The Red Wine Braised Deli Chicken Casserole is something I have grown up on. We didn't have wine at home those days, but my mother made a similar version. It was one of my favourites on many cold winter days in Jamshedpur," reminisces Mukherjee.

"Recently, I have been looking through her cookbooks, and it has brought back so many memories of dishes that I had almost forgotten," he reveals, letting us in to a few more nostalgia-tinged memories. "The regular bread pudding was special for me. It actually used to be a bread jam pudding, with lots of butter and jam. This session will be a tribute where we will attempt to recreate those memories and recipes for our guests," he elaborates.
The restaurant will host a ten-day celebration, with a different menu each day including burgers, breakfasts, a food truck menu as well as an opportunity to cook with Chef Jaideep Mukherjee, apart from free goodies and a deli-on-wheels that will make stops at different locations in the city.
