Nori-The Sushi Haven is an all-vegetarian sushi delivery service based out of Parel that was started by Amrita Shah a year ago during the first phase of the lockdown. Branching out into making sushi commercially after years of creating it for family and friends, Shah prefers to focus on the more novel and innovative forms of sushi than taking the traditional route. The menu is filled with interesting items such as sushi macarons (Rs 1,050, six pieces) that are small, naturally coloured (using butterfly pea for blue and beetroot for pink) round disks of vinegar-ed sushi rice held within fillings like avocado, cream cheese and cucumber. There is also the very unique donut sushi (Rs 1,300, six assorted flavours, including the bestselling truffle edamame) and the sushi cake (Rs 1,650, half kg) for the taking.

Launched over a decade ago by Japanese expat Harry Hakuei Kosato, Sushi and More is one of Mumbai's most popular Japanese food delivery businesses. The menu comprises vegetarian (including Jain-friendly) and non-vegetarian sushi rolls, nigiris, bento boxes and other Japanese dishes like chicken karaage. While we loved the crunchy prawn tempura roll (Rs 270, four pieces), we also enjoyed the slightly chewy shiitake nigiri (Rs 330, three pieces) and the creamy double avocado roll (Rs 450, four pieces).

It was in February 2020 that personal trainer Siddharth Raj first launched Saiko Sushi House in Bangalore, to be followed by the brand's Mumbai cloud kitchen at Parel. Probably the least traditional sushi delivery service on this list, this one is all about unconventional iterations of sushi ranging from fruit sushi as dessert to fusion fried sushi. Speaking of which, the Bombay roll (Rs 519, four pieces) is a fried sushi with seared spicy tuna anointed with a strawberry-kiwi ponzu. The Idukki gold roll (Rs 519, four pieces) is a fusion sushi with smoked salmon and tempura banana paying homage to its Kerala inspiration. Among the veg ones, we liked the spicy watermelon (Rs 319, for six pieces) and the vegan sushi with avocado (Rs 319, six pieces). If you were curious about the name, âsaiko' is a hyperbolic Japanese expression similar to âsuper'.

The Sushi Collective (TSC) began as a passion project to help the underprivileged. The Ghatkopar-based platform by Pooja Dani is a vegetarian sushi delivery kitchen. Popular items include the butterfly pea-enhanced TSC signature roll (Rs 450, 8 pieces) and the Japanese spice roll (Rs 450, 8 pieces) which blends avocado, asparagus and Japanese mayo with tempura flakes. Ingredients
. 1 sheet nori (seaweed paper)
. 100 gm sushi rice
. 70 gm avocado cubes
. 10 gm cream cheese
. 30 gm avocado slices
. 5 gm wasabi paste
. 12 ml Kikkoman soy sauce
. 5 gm gari (pink Japanese ginger)
Method
Peel the avocados. Remove the seed. Cut one half of the fruit into chunks and keep aside. From the other half, cut thin slices of the fruit that will be used to cover the roll. (Note: avocados tend to discolour when cut and kept aside for long before use. To avoid discolouration, add a few drops of lime juice on the slices and chunks). Tightly wrap the sushi mat with cling wrap. Apply very little oil on the entire mat. Spread the cooked sushi rice on the nori sheet evenly. Make sure to spread the rice and not press or mash the grains. Flip and place the sheet on the sushi mat and apply cream cheese. Place the avocado chunks on the sheet with the cream cheese. Using the sushi mat, starting from one end, roll the sheet while pushing the ingredients inside, making sure that they are in place. Roll neatly. Place the thin slices of avocado on the roll. Using the sushi mat, press down gently while maintaining the shape of the roll. Use a sharp knife and cut the roll into eight pieces. Serve with wasabi, Kikkoman soy sauce and gari.
