THE Bhagnari community finds its roots in the villages of Bhag and Nari in Southern Balochistan. This weekend, attend a pop-up by chef Priya Jham, who runs a catering company and teaches Bhagnari and Mughlai cuisines.

Gulab Shahi Tukda

Her recipes have been passed down through generations. These include Mutton Chops (double chops of ribs cooked slowly over low flame for over three hours and finally pan-fried), Stuffed Aloo Tikki, Beh Ki Sabzi (lotus stems cooked in clay pot), Sajji Chicken (whole chicken marinated for hours with Bhagnari spices), Arbi Tuk (double fried colocasia roots), Pulao E Azm, Kheema (minced mutton made Baloch- style), accompanied by dahi wada, papad churra and homemade pickles. To round off the meal, pick between a Dry Fruit Sewai Mithai and a Gulab Shahi Tukda.
