Rise and fall

. THOUGH tomato and chilli prices had increased, fortunately, the LPG price rise didn't occur during the same time. And when gas prices increased, tomato and wheat flour prices had dropped a bit. So, in a way, there has been some balance in prices of ingredients. Having said that, the tomato price rise affected the profit margin as our menu has several tomato-heavy dishes, but we did not compromise on quality. We carried on with the same price because our clientele primarily includes middle-class families, who would not be able to afford a hike. We cut corners in the profit segment, but maintained the quality of food, as we have done since 1940.

. The rise in price has surely pinched us, and we had to increase the price of the dishes on the menu in the R30- R70 price range, depending on the thali. These changes were mainly for chicken and mutton thalis, as these require a lot of tomatoes. However, we did not cut down on the use of ingredients as that would mean compromising on quality and flavour. Additionally, we decided against changing thali items, as it would upset patrons.
