This Navratri, try your hands on some healthy and tasty on-the-go food items. Mumbai chef Kamlesh Rawat has shared recipes of three delicious dishes, which you can make at the comfort of your home with common ingredients. Take a look:

1. Apple Rabdi

This is a healthy and delicious dessert prepared in thick milk and grated apples.

Preparation Time: 15-20 minutes
Cooking time: 30-35 minutes


Apple Rabdi

Ingredients
1. 3 medium sized apples
2. 1 litre milk
3. 4 tablespoons sugar
4. 1/4 teaspoon Green cardamom
5. 8 to 10 blanched and sliced almonds
6. 8-10 blanched and sliced pistachios


Method
1. Pour milk in a broad vessel and bring to boil. Simmer until it gets reduced to half the original quantity.
2. Add sugar and cook on low heat. Keep stirring continuously. Peel and grate two apples. Add the grated apples to reduced milk and mix thoroughly.
3. Cook for three to four minutes. Add cardamom powder, almonds and pistachios.
4. Pour into a serving dish. Thinly slice the remaining apple and arrange the slices all around the dish. Serve hot or cold.


2. Dates and nuts laddu recipe


Dates and nuts laddu


A traditional Indian dessert made with dry fruits and coconut. It is quick to make and healthy to eat.
Preparation time: 12 minutes
Cooking time: 3 minutes


Ingredients:
1. 240 ml cup used
2. 20 large dates pitted
3. ¼ cup mixed nuts (almonds, cashews, walnuts, pistachios, peanuts)
4. 1 tbsp. Desiccated Coconut (optional)


Method:
1. Dry roast nuts for few minutes if on the gas oven and set them aside to cool. Or add them to a microwave safe tray and microwave for about 2 minutes. Stir in between at least twice.
2. To the same pan, add dates and heat them until turn soft. If in a microwave, add dates to the same tray, microwave for about 30 to 60 seconds to soften them.
3. Add desiccated coconut if using.
4. Knead or blend the dates in a blender and set it aside. Add nuts to the blender and pulse them coarsely or chop them.
5. Take small portions and roll them to balls.
6. You can roll them in desiccated coconut to give a laddu look.
If you wish to store these balls at room temperature for about a week or so, then I suggest you to heat the dates for a little longer.

3. Baked Shankarpali Recipe


Baked Shankarpali

This is a typical healthy Indian snack made by baking it and not deep frying.

Preparation Time: 16-20 minutes
Cooking time: 11-15 minutes

Ingredients
1. 1/2 cup of whole wheat flour
2. 1/2 cup of refined flour (Maida)
3. 3-4 cloves and garlic crushed
4. Salt to taste
5. 1 teaspoon of red chilli powder
6. 1 and 1/2 teaspoons chaat masala
7. 1/2 teaspoon cumin powder
8. 1/2 cup of tomato puree
9. 2 tablespoons ghee


Method
1. Preheat oven to 160°C. Place whole-wheat flour and refined flour in a bowl. Add crushed garlic, salt, red chilli powder, chaat masala, cumin powder, tomato puree, ghee, and mix these well.
2. Knead into medium soft dough. Cover the dough with a damp cloth and rest it for 15 minutes
3. Roll out into a round disc while you ensure that the roll is not too thin. Cut into small triangles.
4. Separate the pieces and arrange them on a silicon-baking sheet. Keep the pieces on a baking tray.
5. Place the tray in the preheated oven and bake for 10 to 15 minutes.
6. Check to see if they are crisp. If not done, bake for five minutes more.
7. Bring the tray out and set aside to cool down to room temperature.
Store in an airtight container and relish the Baked Shankarpali
