A tricoloured feast
Try The Bohri Kitchen's mutton raan, for which home chef Nafisa Kapadia marinates the meat for over 48 hours in ginger-garlic paste and then cooks it for over three hours, turning it to a fall-off-the-bone variety. Keeping Republic Day in mind, the team has tweaked the dish to represent the colours of the Indian flag. The red masala is made using garam masala, garlic and Kashmiri chillies; the white masala is made with cashew nuts, fresh cream and garlic, and the green is with chutney. Their seven-course thaal menu also includes the signature smoked mutton kheema samosas, white chicken biryani and a dessert.
ON: January 26, 27 and 28
AT: Colaba, location to be revealed post registration.
