Chef Alex Sanchez's butter chicken wings can be savoured in San Francisco, thanks to a unique global culinary project by renowned international chef Corey Lee

Getting chefs to reveal their culinary secrets is no mean feat but three-starred Michelin chef Corey Lee (of San Francisco's Benu fame) has managed to do just that. Lee has invited 80 chefs from across the world to reveal the recipes of signature dishes. These will be replicated on the menu of his new restaurant, In Situ, located on the ground floor of San Francisco Museum of Modern Art, USA, set to open in Spring 2016.

The Indian contribution to this ambitious project is by The Table's executive chef Alex Sanchez. "While chef Corey Lee will be chef of this new restaurant, he is essentially curating a menu comprising dishes contributed by chefs from all over the world. His team in San Francisco will then execute these dishes based on precise recipes and demonstrations provided by each participating chef. I was humbled but nervous about participating in this project, knowing how many world-class chefs were involved." These include New York chef Daniel Boulud and Wylie Dufresne, the leading American proponent of molecular gastronomy.

Lee's brief to Sanchez was to contibute a dish that represents the Colaba restaurant and the city. Sanchez's pick: Butter Chicken Wings. "Our boneless chicken wings have become a signature preparation. I modified the recipe to better represent Mumbai and transformed our wings into Butter Chicken Wings," the chef sums up.
