Chrome Hospitality's tenth venture, Late Checkout, opens in January in a restored 1970s textile mill. Featuring a cocktail-forward bar, industrial charm, and a menu by chef Amit Dhoundiyal, it blends Japanese cuisine with global influences and innovative techniques.

Helmed by Chef Prasad Metrani, Madeleine de Proust at Fairmont is a botanical garden-inspired tea lounge blending Indo-French culinary craftsmanship with serene surroundings. The venue aims to evoke nostalgia and emotional connections through sensory experiences, from tea and pastries to coffee, sparking memories and indulgence.

Chili cereal prawn from Khao Man Gai 

Chef Seefah Ketchaiyo and head chef Karan Bane created Khao Man Gai in Bandra, focusing on the Thai chicken rice dish. Served in fried, grilled, and steamed styles, it offers an authentic Bangkok street food experience, inspired by the popularity at their former restaurant, Seefah.

Mayank Bhatt

The Dim Sum Room, led by Mayank Bhatt’s All In Hospitality, will open this year in Kala Ghoda, offering a 1920s Prohibition-era speakeasy vibe. It will feature cozy dining, a speakeasy-style bar, and Cantonese cuisine with global influences, including Hong Kong-style dim sum.

After successful expansions in Bengaluru, Pune, and Hyderabad, patisserie chain Conçu is now targeting Mumbai. Partner Swati Upadhyay highlights Mumbai's dynamic culture and diverse food scene as ideal for their hybrid concept, featuring a gourmet café by day and cocktail bar by night with interactive sessions.

The interiors at Toscano, Hyderabad

Toscano, the Italian dining chain led by Goutham Balasubramaniam, is opening two outlets in Navi Mumbai and Nariman Point this year. Balasubramaniam highlights Mumbai’s vibrant culinary scene and the brand’s commitment to world-class Italian cuisine with handcrafted dishes and curated wine pairings.

An example of the European delight Milagro will focus on 

Milagro, founded by Francesca Smith, Romeo, Suved Lohia, and Deepesh Sharma, is a fine-dining restaurant and cocktail bar offering authentic Spanish cuisine by Michelin-trained chef José Manuel Borrallo Sánchez. Its interiors blend Parisian charm with modern opulence, and the cocktail bar evokes vintage jazz vibes.

The decor will reflect a vibrant and high-energy atmosphere

MUZE, a European-Asian cuisine café in Khar by Thevar Chandrahasan Pandian (ex-Sassy Spoon, Indigo), offers elevated daily dining with dishes like pumpkin ravioli, miso mac and cheese, gochujang risotto, BBQ duck bao, and chimichurri prawns. It transitions into a lively bar at sunset.
