Chermoula Cottage Cheese Espetada by Ravish Mukri, head chef at Ditas Mumbai
This dish isn't just a meal, it's a journey through rich flavours and aromatic bliss. Chermoula, the star of the dish, is a tangy and herbaceous relish originating from Morocco and popular in North African countries like Libya and Algeria. The main ingredients, cumin and parsley, create a symphony of tastes that blend beautifully with the smokiness of the Espetada, a Portuguese style of cooking food on skewers. What makes this dish a personal favourite for Chef Ravish is the incredible aroma of the fresh herbs and ground spices. “It's not just a dish, it's an experience, perfect for family meals in the winter season,” says the chef.

It's a traditional Japanese meal that means ‘Rice Bowl Dish.’ It is a little similar to Bibimbap from Korea but it has its own unique twist.
