World Pizza Day was observed earlier this month by fans of the mouth-watering delicacy around the globe. This doughy goodness has been the preferred comfort food across generations, effectively becoming a popular culture icon.

Although pizza traces its roots to Italy, owing to the customisable nature,every country has a number of variations - from the extra cheesy versions, to the fusion ones with herbs of all kinds.It is no secret how debates over uncommon toppings go viral, yet restaurants across India are not one to hold back. Here are three simple pizza recipes that are easy-to-prepare, at home, and delicious to binge-on.

American Hot Sauce Pizza from Lil Gamby

"It is one of our most savoured offerings and is a take on Tex-Mex Cuisine. We have highlighted the flavour of Mexican Salsa Macha made with nuanced techniques and paired with the traditional pizza," Chef Sushil Multani, Culinary Director, Acapella Hospitality.

Ingredients

For pizza dough

Tipo 00 grade farina 175 gm
Water 100 ml
Salt 5gm
Olive oil 4 gm
Yeast 0.33 g

For salsa macha

Chipotle chilli 3 nos
Habanero chilli 1 nos
Dry Kashmiri chilli 5 nos
Arbol chilli 3 nos
Sesame seeds 2 tsp
Peanuts 2 tbsp
Oil 60 ml
Salt 3g

For Salsa Macha Chicken

Chicken Leg Boneless 150g
Salsa Macha 2 tbsp

Mozzarella 80 gm
Jalapenos 1 sliced
Cilantro Leaves 7-8 nos

Method

1. Sieve flour and combine all dry ingredients.
2. Mix yeast with water and add to the dough.
3. Make a dough by kneading till the gluten is formed well.
4. Rest for 24 hours in the refrigerator.
5. Next day, slap and shape the dough till flattens out.
6. To prepare salsa macha, heat oil in a pan and all dry chillis till they puff.
7. Quickly add other ingredients and cook for about 45 seconds more and remove.
8. Cool the mix and grind coarse to get salsa macha.
9. Marinate the chicken with salsa macha for 4 hours and sear on a hot pan and roast in the oven at 190 degrees for 8 minutes.
10. Smear a raw tomato purée and salsa macha in the ratio of 1:1.
11. Add the above mentioned cheese and spread evenly. place the cooked chicken leg cut into cubes.
12. Bake at 375 degrees celsius for 4 minutes.
13. Garnish with jalapeños slices and cilantro leaves and serve.

Truffle mushroom pizza by The Blue Bop cafe

"We have added our own twist using mushrooms as well as truffle oil to create treat those who love the flavour of and can't have enough of mushrooms," Sunil Singh, chef at The Blue Bop cafe.

Ingredients

Pizza Dough 220 gm
White sauce 80 gm
Imported mozzarella cheese 80 gm
Cheddar cheese 20 gm
Wild mushroom 40 gm
Shitake mushroom 30 gm
Truffle oil 10 ml

Method

  1. Pre heat the oven at 340 degrees Celsius.
  2. Take the dough and hand stretch it to 12 inches.
  3. Place the dough on screen and spread white sauce over it evenly.
  4. Spread mozzarella cheese, wild mushroom, shitake mushroom all over the pizza evenly.
  5. Now cook the pizza in oven for 7 minutes till get crispy.
  6. Once cooked, remove and drizzle truffle oil.

Pepperoni Pizza by Swan

"Pepperoni has been among the most popular pizzas. The crunchy thin-crust, with flavourful pepperoni is a simple yet mouth-watering combination," Chef AryaGahlaut at Swan.

Ingredients

For pizza dough

Refined floor 1kg
Fresh yeast 10gm
Sugar 20gm
Salt 5gm
Water 530 ml
Baking powder 5gm
Refined oil 40gm

For final pizza
Pizza dough 130gm
Pizza sauce 60gm
Mozzarella cheese 110gm
Pepperoni slice 110gm

Method

  1. Pre heat the oven at 320 degrees Celsius.
  2. Dissolve yeast and sugar in warm water. Let stand until yeast softens and begins to form a creamy foam, about 5 to 8 minutes.
  3. Combine flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together.
  4. Transfer dough to a floured surface and knead until smooth, about 2 minutes.
  5. Use your fingers to stretch the pizza dough to make a thin crust base.
  6. Add pizza sauce.
  7. Add toppings of mozzarella cheese, and pepperoni slices.
  8. Bake at 320 degrees Celsius for 7 to 8 minutes.
