Ekaa unveils new bar menu 'Dwadash' inspired from Ayurvedic ingredients

Chef Niyati Rao's Mumbai-based restaurant Ekaa unveils new cocktail menu, 'Dwadash', that takes inspiration from the rich heritage of Ayurveda and its ingredients.

Curated by Jishnu AJ, head mixologist, the second edition of the cocktail menu at the city restaurant in Fort is rooted in ancient traditions, ingredients and flavours that have mapped the Ayurvedic history of India. "Our journey with Dwadash began almost a year ago, driven by a deep desire to create something authentically Indian," shares Jishnu AJ. "Our previous menu delved into the nostalgic flavours of India's ecosystems, evoking cherished childhood memories. With Dwadash, we delve deeper into the world of Ayurveda to highlight its vast array of forgotten ingredients," he adds.

At Ekaa, they say the focus has always been on ingredients, on pushing boundaries, and building its own blueprint. The Ayurveda-inspired menu serves as a testament to this savoir-faire, focusing on herbs, spices, roots, and other ingredients, often lost in the archives, which have been sourced from diverse corners of India.

Dwadash is more than just a menu because they believe it is a symphony of flavours intricately woven with Ayurvedic wisdom. The menu features drinks such as Wormwood with Citrus Gin, a tantalising fusion of zesty orange, aromatic cinchona bark, and toasted coriander, heightened by the subtle sweetness of jasmine syrup. The concoction dances on your palate with the perfect blend of house-made vermouth, and Chirreta, creating a symphony of flavours that captivate the senses.

For a taste of the exotic, Kapur Kachri blends the Indian Agave spirit mixed with kapur kachri, clarified apple juice, and the refreshing essence of kiwi. The effervescence of bubbles and the citrusy kick of supasawa elevate the experience, leaving a lingering impression of sophistication. The Khus is a delight featuring smoked tequila, khus roots, and the intriguing fusion of honey-black garlic. This refined potion is balanced with the purity of clarified apples and the bright notes of supasawa, promising a nuanced and unforgettable taste adventure. Each sip tells a story of craftsmanship and creativity.
