Like many in the hospitality industry, Blanco faced an uncertain future during the COVID-19 pandemic. Forced to close its doors temporarily due to lockdown restrictions, the restaurant's operations came to a halt. But for the team behind Blanco, this period became an opportunity to rethink and refresh the restaurant's offerings.
"We used this time to come back stronger, with a complete thematic overhaul," shares the founder, Aniket T Patil. "Our goal was to not only adapt but elevate the experience for our guests. We revamped the entire space with new designs and launched a specially curated food menu to cater to the changing tastes of our patrons."
The reopening of Blanco marked a fresh chapter, with an array of new designs and an enticing fusion menu that fused Italian, Mexican, Indian, Mediterranean, and pub-style dishes. The summer mango menu, which quickly became a fan favorite, and the monsoon chai and pakoda pairings perfectly captured the seasonal essence, giving guests another reason to return to their favorite rooftop spot.
